Dark & Rich— A Weekend Dessert Spiked with Kahlua Liqueur

When I began this blog a few months ago, I promised cake, among other things. With all the busy activity involved in getting a website up and running, starting an Etsy shop, and just plain being caught up in home, garden and life, there has been little cake. And though I may have made one or two in the interim, they have not found their way into the posts of this blog.

However, last week one evening on Pinterest , I came across a cake that intrigued, and because there was a version that utilized the convenience of a mix as a base— a recipe I had time for— I decided to give it a try. The recipe I used is on Flour Arrangements. Other than a couple of minor differences, I followed her recipe and instructions. She provides a from scratch version of the Kahlua Chocolate Cake, and I will certainly try it some time when I have the chance.

Since her wonderful blog and several others already do have great recipes for this cake, I will only add a couple of notes of my own.

  • Instead of setting the oven on 350 degrees, I used the 325 degrees that I always use when baking in a Bundt Cake Pan. I used the same 55-60 minute time, and did in fact remove it from the oven at 55 minutes.
  • The only other note I have is about the chocolate chips to be incorporated into the cake batter. I used mini-chips, and tossed them in a scant tablespoon full of flour before adding in. The flour keeps them from sinking to the bottom of the batter.

Aside from those points, I followed Suzanne’s directions, and the cake was simply wonderful. It was moist, rich and full-bodied. The Chocolate-Kahlua Ganache was to-die-for delicious. My family gave this recipe a unanimous thumbs-up, and the printed recipe goes into our family cookbook. I know these pictures are not my best. I was in a hurry and used my cell-phone to capture these images. I found it regrettable that by the time the cake was finished our artificial light in the kitchen did not do it justice. We will get better at all this.


One more note— my Kahlua is home-made. Someone gave my mother the recipe I still use some three decades ago or better, and we have made it ever since. It is simple, and quite delicious.

Ingredients
  • 3 1/2 cups Sugar
  • 2 cups Water
  • 1/3 cup + 1 tablespoon Instant Coffee Best Quality!
  • 1 to 3 Vanilla Beans Depending Upon Size!
  • 4 cups Vodka or Rum
Instructions
  1. Mix the sugar, water and instant coffee in a small saucepan. Bring almost to a boil. Allow to cool.

  2. Place the vanilla bean(s) into a clean, sterile bottle. {At least two-quart capacity. I saved a large wine bottle to use for mine.} When the sugar-coffee mixture has cooled slightly, pour it over the vanilla bean.
  3. Let the mixture cool completely before adding the quart of vodka or rum. Close the bottle and store it in a cool, dark place. Age your liqueur for three to four weeks before serving

Kahlua GlassThat is all there is to it.  I have always used vodka in my Kahlua. I am not a fan of rum really. Either way it is tasty stuff, though. We like it over ice cubes with a bit of milk or cream, but use it in your favorite Kahlua cocktail recipe, mixed into an after dinner coffee, over ice cream or brownies, or bake a cake with it. It is fun and easy to make, and versatile enough to keep in the kitchen all the time.

I love the little Kahlua glasses so much that I just had to show them off.  They were part of my haul the summer before last when I helped my Mom and Step-Dad clean out a townhouse after their tenants moved out. These people were Hoarders in the truest sense of the word. Though shocked by the dirt, the disarray and just plain quantity of stuff these people had amassed, my Thrifter’s Heart just  could not ignore the chance to score some fantastic finds. The tiny Kahlua glasses were among a treasure trove of glassware I recycled from that townhouse kitchen.
